Grilled Salmon with Pinto beans

Healthy start to the year! Three different weighing scales don't lie :(. So in an attempt to cut some calories, I have decided to cook healthy food this year. Well, at least will try to. Although the good ol' roti-sabzi-dal combo is supposed to be the best, I get easily bored.

Seafood is the safest bet when we start our temporary healthy living lifestyle. It is so good for you. So a grilled piece of salmon on a bed of pinto beans salad was what we ate last night for dinner.


Grilled fish can be quite bland so stock up on a herbs and seasonings. To prepare this, I generously seasoned the salmon fillets with salt and pepper and pan-fried on a grill-pan (for fancy grill marks!) till medium rare. 3 minutes on each side is what we like. Still a bit pink in the middle.

I made a warm salad of the pinto beans with whatever we had in the pantry and refrigerator. Sautéed some onions, carrots and celery along with one can of cooked beans. You can use any of your favourite ones. Once the onions, carrots and celery are cooked, turn off the heat. Add some fresh chopped spinach. Let it wilt a bit in the heat. Now drizzle some olive oil and lemon juice. Mix well and serve with the yummy salmon.

A protein packed satisfying meal. Wont make you miss your bread.

  2. Yeah it is totally worth it. First week I tried to grill everything possible!!! Even plain toast!
