Roasted Green Veggies on a Snowy day

Snowed in today. It snows so rarely in Seattle. When it does, it is the most beautiful sight. Just came back from a small walk as the slope of Queen Anne hill is quite steep to venture out any further. Walking to work tomorrow will be an adventure!



A light sheet for now
I made us a quick pasta lunch with roasted broccoli and asparagus. Roasted the vegetables along with some garlic, olive oil and seasoning in the oven at 450 degrees Fahrenheit for 20 minutes. After that, made a quick pesto by putting some of the roasted asparagus, basil, olive oil, garlic and few almonds and salt into the food processor.



I mixed in the asparagus pesto to some cooked spaghetti and added the roasted veggies. Simple and ready to serve.


Roasting broccoli especially with garlic and some fresh red chillies (I have used paprika here) is one of the best ways to enjoy this vegetable.


Reserve the spears of the asparagus to eat along with the pasta and blend in the rest of the stalk for the pesto.
